banana bread

I make a fair amount of banana bread.  It probably has to do with the fact that we are incapable of finishing a bunch of bananas.  Even though I have tried to fine tune our purchase quantities there are always a couple left.  Banana bread is quick and easy and yummy so I make it often and since I make it often I like to switch it up.  Try different recipes, add different yummy additions...

Today I found this recipe:

Directions:

  1. Preheat oven to 350°F.
  2. Combine the flour, baking soda, and salt, stirring with a whisk.
  3. Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute).
  4. Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended.
  5. Add flour mixture; beat at low speed just until moist. Spoon batter into an loaf pan coated with cooking spray.
  6. Bake at 350°F for 50 minutes to 1 hour (depending on size of loaf pans) or until a wooden pick inserted in center comes out clean.
  7. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
 Sounded good to me.  I made some modifications.  I decreased the sugar to 1/2 cup, I used light vanilla flavored yogurt and about 1/3 cup of chocolate chips and 5 small reeses peanut butter cups chopped up.  I was planning on adding walnuts since that is my husbands favorite but we were out so no nuts this run!



I would highly recommend you invest in one of these bread pans from King Arthur Flour.  They are amazing and the bread practically leaps out of them.  They cook evenly and they are really well made pans that will last forever.  Check them out here


It's a keeper.  I'll be having it for a snack on the porch.

  1. Oh that looks good!! I made banana bread fairly often too for the same reason as you- we never get through all our bananas quick enough. I won't touch them after they have spots. This recipe looks so yummy; I'll have to give it a try!
